Acid anhydrides react rapidly and exothermically with water, even in the absence of acids, bases, or other catalysts. The parent carboxylic acids are produced, which further accelerate the hydrolysis reaction (Loudon, Marc. 2002. Organic Chemistry. 4th ed. New York: Oxford University Press. p. 957; MCA Case History No. 1865, Case Histories of Accidents in the Chemical Industry, Manufacturing Chemists' Association, Washington).
