Sulfites decompose to sulfur dioxide in acidic solutions, including in weak acids (Housecroft, C. E.; Sharpe, A. G. Inorganic Chemistry, 2nd ed.; Pearson: Harlow (England), 2005, p. 459).

In the case of acidic salts these reactions may be relatively slow, however, with confinement the concentration of gas will build causing pressurization.
